What I like about this sheet pan leftover turkey is that I don’t spend too much time in the kitchen to prepare a good meal for the family. I usually have pre-cut veggies in the fridge, so I just throw everything on the pan when I make this meal.
For another leftover turkey for meal prep, I love this Turkey Veggies Croquette, I can make bunches of it, and keep it in the freezer as an individual serving size. Whenever I need a quick lunch, I just take one croquette and warm it up in the toaster oven on 400° F for 5-10 minutes.
