Soft Marbled Chickpea Cookie Bars

Easy gluten-free, dairy-free, nut-free cookie bars by using chickpea to replace the flour and no oil added.

Ingredients
  • 1 can (28 fl oz) chickpea
  • 2/3 cup sugar
  • 4 eggs
  • 1 cup chocolate chip
  • 2 tbsp non dairy milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon powder
Instructions
  1. Preheat oven to 350°F. Prepare the sheet pan layered with parchment paper.

  2. Put the chocolate chip and Dairy free milk in the bowl. Heat it up in the microwave until chocolate melt about 30 seconds, whisk it with a spoon to get the smooth melted chocolate.
  3. Put Chickpea and eggs in the food processor, process until chickpeas smooth.
  4. Add the rest of ingredients except the melted chocolate chip. Process until well blended, take about 5 tbsp of the dough to the bowl, set aside.
  5. Add the melted chocolate to the food processor, process it until well blended.
  6. Pour the chocolate dough into the prepared pan. Spread it with spoon or spatula.
  7. Put the white dough on top of the chocolate dough, spread it with the spoon to resembles the marble pattern.
  8. Bake it in the oven for 15 minutes, let it cool for about 5 minutes before you cut it up into bars.
