This leftover turkey recipe is easy to make, baked it together with brown rice and all simple ingredients from the pantry, perfect for a healthy, dairy-free and gluten-free meal for the whole family.

Ingredients
  • 2 cups brown rice
  • 2 cups cubed turkey meat
  • 1/2 cup purple onion
  • 1 red pepper chopped
  • 1 cup chopped carrot
  • 1 can black bean
  • 1 tsp salt
  • 1 tsp black pepper powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 cloves garlic, minced
  • 2 tbsp oil
  • 4 cups water
Instructions
  1. Preheat the oven for 375° F. Prepare the casserole dish with a lid.

  2. Add oil in the pan, sauté carrot, pepper, and onion over medium heat for about 5 minutes. Saute it first bring up the flavor from veggies.

  3. Rinse the rice, put it on the casserole dish. Add all ingredients, mix it up with a spatula.
  4. Put the lid on, then bake it for 40-45 minutes until the rice absorbed all liquids.
  5. Fluff it with the spatula, put the lid back on, take it out of the oven and let it rest for about 10 minutes.
Recipe Notes
  • I use casserole pan with lid, and you can also cover it with foil.
