I always amazed by the size of the turkey for cooking. Like you know, how many left over we can get from just one turkey. In my place, the leftover will last up to three days. Of course, we use it for sandwich too, but there are lots of possibilities how to use up leftover turkey meat. From sandwiches, soup, casseroles, pasta, to salad, the choices are endless.

Since I always have canned bean in the pantry, so I go ahead make this baked rice with turkey leftover. It is a straightforward recipe, and there are not many things to do for preparation other than chopping carrots and onion before sautéing it, cut or shred the turkey meat that only takes a few minutes.
You probably have all ingredients to make this recipe already, so why don’t flip that leftover into a brand new homemade meal for the whole family.

- 2 cups brown rice
- 2 cups cubed turkey meat
- 1/2 cup purple onion
- 1 red pepper chopped
- 1 cup chopped carrot
- 1 can black bean
- 1 tsp salt
- 1 tsp black pepper powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 cloves garlic, minced
- 2 tbsp oil
- 4 cups water

Preheat the oven for 375° F. Prepare the casserole dish with a lid.

Add oil in the pan, sauté carrot, pepper, and onion over medium heat for about 5 minutes. Saute it first bring up the flavor from veggies.

Rinse the rice, put it on the casserole dish. Add all ingredients, mix it up with a spatula.

Put the lid on, then bake it for 40-45 minutes until the rice absorbed all liquids.

Fluff it with the spatula, put the lid back on, take it out of the oven and let it rest for about 10 minutes.
- I use casserole pan with lid, and you can also cover it with foil.

This was good but I felt needed a flavor bump, possibly using chicken broth instead of water to bake it. I used left over chicken instead of turkey and that probably was not as flavorful as turkey. It took longer to bake than directions said, for me. Next time I would increase the seasonings, too.
