Apple Fennel Salad

This salad is fresh and comforting. If you like fennel, you will know that licorice taste is refreshing. Dairy-free, nut-free.

If I look at this salad picture, it is not colorful and look bland. But please don’t be trick by the look. This salad is fresh and comforting. If you like fennel, you will know that licorice taste is refreshing.

I serve the salad with homemade garlic lemon dressing. You can definitely serve the salad with your favorite dressing.
What I like about this salad is:

  • Refreshing licorice taste.
  • Garlicky but it is not overpowering the other ingredients taste.
  • Quick and easy to put together.
  • Perfect for meal prep.

This salad is fresh and comforting. If you like fennel, you will know that licorice taste is refreshing. Dairy-free, nut-free.

Ingredients
  • 1 Fennel bulb
  • 1 Granny Smith Apple
  • 2 tbsp pumpkin seed
  • 2 garlic clove
  • 1 lemon
  • 2 tsp raw honey
  • 1/2 tsp salt
  • 1/4 cup 1/4 cup olive oil
Instructions
  1. Cut the Fennel vertical side, and remove the core.
  2. Thinly slice Fennel bulb and apple, preserve the Fennel frond. 
  3. Arrange the salad on the serving plate.
  4. To make the dressing, put garlic, fresh squish lemon juice, honey, salt and oil in the blender. Process it until smooth.
  5. Drizzle the dressing over the salad, add pumpkin seeds on top.

I use raw pumpkin seed on this Apple Fennel Salad because I like the green color compliment the salad. If you like roasted pumpkin seed, that is great too. If you don’t have a nut allergy, you can use walnut, almond or pecan for this salad.

    I never get the licorice taste with fennel..it always gives me a spring taste of freshness!! Thank goodness because I love fennel and can’t stand licorice! Thank for this great spring recipe!!
