Easy cauliflower fried rice recipe for a healthy vegan inspired meals and loaded with vegetables. Healthy, soy-free, dairy-free, gluten-free, nut-free, vegetarian, vegan.

I might be late to the party, but I finally make my version of cauliflower fried rice. This recipe is not the regular fried rice, but it is only minced cauliflower on this recipe instead. The minced cauliflower resembles the rice in shape and size. Therefore it called cauliflower fried rice, that is in my opinion.

To get the finely minced cauliflower, you can use the grate or food processor. I use the food processor with the S blade to do this. It will save your time and mess free.

I use the vegetables that we always have in the fridge, so you don’t have to look for some unique or exotic ingredients to make a tasty but straightforward cauliflower fried rice. The taste might not be the same as the regular fried rice, but it got the healthier version for you as it is low carb and high fiber meal.

Ingredients
  • 2 heads cauliflower
  • 1 stalk broccoli
  • 3 medium size carrot
  • 1 onion
  • 1 pound white mushroom
  • 1 red bell pepper
  • 3 garlic
  • 1 tsp sesame oil
  • 1 tsp salt
  • 1 tsp black pepper powder
  • 2 tbsp cooking oil
Instructions
  1. Cut the stalk off from cauliflower. Cut the cauliflower into a smaller size, put them on the food processor with the S blade on it. Process it until it finely minced crumbles shape that resembled the rice. Use the pulse button if you need to.
  2. Cut up the broccoli, onion, mushroom, bell pepper and carrot.
  3. Minced the garlic finely.
  4. Heat up the cooking oil on the medium size pan over medium heat.
  5. Sautee onion until it softens, add mushroom, keep stirring it until the mushroom soft.
  6. Add broccoli, bell pepper, carrot and minced garlic, stir it until all veggies are tender.
  7. Add cauliflower rice, stir it for few minutes.
  8. Add sesame oil, salt, and black pepper. Stir it until all seasonings well blended with the veggies. Serve.

This recipe is plant-based cauliflower fried rice. Add tofu, tempeh or chickpea for more protein and stay on the plant-based meal. If you would like to add meat, you can add cooked chicken, scramble egg, thinly slice steak or shrimp. So, this recipe is customizable to your preference.
