Minty Green Peas Salad

Welcoming spring with this Minty Green Peas Salad. It is a perfect addition to the spring season meal rotation or anytime actually because all ingredients I use here mostly available all year long.

Let me tell you what I like about this salad:

  • It is refreshing
  • Minty of course
  • Easy to prepare
  • Gluten free, dairy free, nut free
  • Comforting

It is one of the seasonal eating ideas because obviously there is plenty of fresh green peas during the spring season. The mint plant starts growing nice and lush in the spring. Also, radish is one of the first fresh root veggies in the spring.

I use the butter lettuce on this salad because I like the soft and crunchy texture of this type of lettuce. It actually pairs well with green peas. Feel free to use any type of lettuce you like.

Fresh, dairy-free and comforting salad for seasonal eating ideas with the abundance of fresh spring veggies.

Ingredients
  • 4 cups frozen green peas
  • 4 cups butter lettuce
  • 1/2 pound radish
  • 1/3 cup mint leaves
For Minty Dressing
  • 1 cup mint leaves
  • 3 cloves garlic
  • 2 tbsp minced onion
  • 1 lemon
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp honey
  • 1/3 cup olive oil
Instructions
  1. If you use frozen peas, prepare it per direction on package
  2. Thinly slice the radish. Torn the butter lettuce

  3. In a serving bowl, put the butter lettuce, mint leaves, sliced radish, and green peas.
  4. For the Minty Dressing : put the freshly squeezed lemon juice and the rest of ingredients in a blender.

  5. Process it until smooth.

  6. Toss the salad with the mint dressing. Serve.

This salad pairs well with the roasted rack of lamb, roasted white fish like halibut or sole, or even roasted beef. Enjoy the salad itself if you preferred or adding a soft boiled egg on top for a spring season theme meal.

If you use mint from the grocery store, keep the stalk and put it in the glass with little bit water. In a week you will have a new plant for free. As soon as it has root then transfer the plant to the growing medium, a regular potting soil still will make the mint plant happy.

If you have a garden, plant mint outside on the container for easy maintenance. If you plant mint right in the ground, make sure plant it in the container then bury the container in, this is one way to prevent mint plant taking over your entire garden. Mint is perennial, so you don’t have to replace it every year, it will come back year after year.
