One comfort food of quick and easy healthy chicken pasta skillet recipes for family weeknight dinner meals or meal prep ideas that also use homemade seasonings.
This meal came up after I had too much pasta in my pantry. For most of us, who always need a quick and straightforward recipe, pasta will fit for this and also an excellent choice for meal prep.
My youngest love to eat pasta, but it has to be the small type of it like mini shell or macaroni. So, I use these type of pasta for skillet cooking method.
You can use any vegetables you like, as this is more like cleaning up the extra produce you have in the fridge. I add chicken breast pieces for more protein. I boiled the chicken breast first then cut it into pieces. You can also use any leftover from the rotisserie or last night roasted chicken dinner.
- 5 cup cooked pasta
- 2 chicken breast
- 3 carrots
- 3 celery stalk
- 1 onion
- 6 clove garlic
- 2 tomatoes
- 2 tsp salt
- 1 tsp blackpepper
- 1 tbsp paprika powder
- 2 tbsp dried basil
- 1/2 cup slice green onion

Cook the pasta as directed on the package.

Boil the chicken breast then cut it up into pieces while waiting for the pasta cooked.

Put onion, garlic, and tomato in the food processor, process it until smooth, resemble the sauce, some chunks of it are ok.

Cut up carrot, red bell pepper, celery and green bean into small pieces.

Heat 2 tbsp oil on the skillet over medium heat, saute the onion mixture sauce, cook it until the liquid lightly reduce about 5 minutes.

Add vegetables, cook it until soft.

Add cooked chicken breast and cooked pasta, stir it.

Add salt, black pepper powder, paprika powder, dried basil, stir it.

Serve it with sliced green onion.

To make it with only around 30 minutes cooking times, while waiting for the pasta cooked, boil the chicken breast and prepare all ingredients. By the time of vegetables are soft, the pasta and chicken pieces are ready to use.
If you would like to prepare it for lunch box, the Chicken Pasta Skillet will keep fresh up to three days in the fridge, but you also use your judgment whether the meal is still good to eat after two days in the refrigerator. I mostly keep cooked chicken in the fridge up to three days.
