Baked Butternut Squash Donuts

This easy baked butternut squash donuts recipe is easy, fun, and delicious for a snack or on-the-go breakfast. The butternut squash donuts are baked instead of fried, delicious, and perfect for fall season friendly meal. Dairy-free, nut-free.

Although the fall season is identical with a pumpkin on everything, there is butternut squash available all year long on the produce aisle too. Of course, the canned one always available also. I usually see pumpkin close to early October in the area where I live here now. So, I am happy enough to use butternut squash for cozy fall cooking for now.

I turn this butternut squash into donuts or doughnut, honestly what is the difference between these two words? I love fried donuts too, but since I make the baked version like this Baked Purple Sweet Potato Donuts which is on highly request by my little one, so cook it this way is a better option. Baking donuts is also messed free, no full bottle oil needed and no need to stand up in front of the stove to make sure it is not overcooking aka burn. Yes, I got burnt donuts before, and I was so upset for wasting my ingredients. Have you got the burnt donuts before?

What You Need To Make Baked Donuts

This baked donuts is not the yeasted one, but it is more like a cakey texture instead. To get the donuts shape, you need the donut pan. You can get the regular size donut pan one or the smaller size 12 cavities mini donut pan.

This easy baked butternut squash donuts recipe is easy, fun, and delicious for a snack or on-the-go breakfast. The butternut squash donuts are baked instead of fried, delicious, and perfect for fall season friendly meal. Dairy-free, nut-free.

Ingredients
  • 1 1/2 cup butternut squash puree
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup sunflower oil
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ginger powder
  • 1/4 tsp clove powder
  • 1/4 tsp nutmeg powder
  • 1 tsp cinnamon powder
  • 1 3/4 cup all-purpose unbleached flour
  • 2 tbsp melted dairy-free butter
Instructions
  1. Preheat the oven to 350° F.

  2. In a mixing bowl, beat sugar and egg until light in color.
  3. Add oil, baking powder, salt, ginger, clove, nutmeg, cinnamon, butternut squash puree, mix it well.
  4. Add flour, mix it well.
  5. Prepare the donuts pan, use the silicon brush to grease each cavity with melted dairy-free butter.

  6. Put some of the batters into the piping bag or a ziplock bag, cut the tip.

  7. Squeeze the piping bag to fill up the donuts pan about 3/4 full.

  8. Bake it for 12 minutes or until toothpick comes out clean.
  9. For mini donuts bake it for 8 minutes.
  10. Let the donuts cool for few minutes before removing it out of the pan.

  11. From now, you can glaze the donuts with your favorite glaze or cinnamon sugar.
Recipe Notes
  • I roast the butternut squash on 400° F for 30 minutes. Once it cools down, make the puree by using a food processor. 
  • Preparing time is not include the roasting butternut squash.
  • For mini donuts bake it for 8 minutes and yield 72 mini size donuts.

How To Decorate Baked Donuts

You could use canned butternut squash or canned pumpkin puree if you preferred. My daughter asked me to dip the donuts into the cinnamon chocolate glaze and top it up with some sprinkle on it. I also top it up with hemp heart, she devours it.
