Easy chocolate chip muffins without egg. Use the milled flax seed to substitute the egg. Dairy-free, egg-free, nut-free.
When I want to bake something sweet and realize I run out of eggs, then I have to resource some other substitute to replace the egg, but it has to work well. My first thought is flax seed!
Just like this Eggless Fudgy Triple Chocolate Brownies, the brownies made without egg as well as this Sunflower Butter Flax Cookies.
This flaxseed chocolate chip muffins taste slightly nutty without nuts on it. But if you would like to add nuts, I can say almond or walnut would add a crunchy texture.
- 1 cup sugar
- 1/2 cup dairy-free butter
- 2 tsp baking soda
- 1/2 cup milled flax seed
- 1 tsp cinnamon
- 1 tbsp vinegar
- 1 tsp salt
- 1 cup room temperature water
- 2 cup unbleached all-purpose flour
- 2 cup dairy-free semi-sweet chocolate chip
- Crystal sugar for topping (optional)

Preheat oven to 350 deg F, prepare the regular size muffin tin, line it with muffin cups.

In a mixing bowl, beat the sugar and butter until fluffy.

Add baking soda, milled flax seed, cinnamon powder, vinegar, salt, water. Mix well.

Add flour, mix it until well combined, fold in 1 1/2 cup chocolate chip.

Fill the muffin cup with the batter about 2/3 full.

Bake it in the oven for 12 - 15 minutes until the toothpick comes out clean.

The muffin turns out pretty good although it doesn’t contain any egg. Store it in a covered container or wrap it with the saran wrap. It will last up to 5 days if it lasts that long in the room temperature.

So many people don’t like Flax seeds but they can be used for so many things. This recipe is a great example of using flaxseed for baking. I actually never thought of this. I am going to try it this week.

There is quite few of egg substitutes, flax seed is one of them, there is one called flax egg, with ratio 1 flax egg equal 1 egg.

Oo chocolate chip muffins are my fav but I’ve never made them with flax seed. I enjoy flax seed in my granola currently, but I want to try this out. It sounds yummy!!

The taste is just like chocolate chip muffins and the texture is still fluffy, flax is the best one to replace the egg plus you got the benefit of it.

Heres what i did!
Sub maple syrup for sugar (1/2 cup)
4 T water since syrup is liquid
1 cup organic choc chips
GF flour
Beat butter on its own until fluffy, add syrup when adding other ingredients.
