Sheet Pan Honey Garlic Asparagus Shrimp

If you like to follow seasonal eating, then add asparagus on your list at this time of the year. Not because of asparagus is a very healthy choice but it also very easy how to serve it on a variety of dishes.

One of many ways to cook asparagus is a sheet-pan cooking method. This cooking method is my favorite way because sheet-pan cooking is very straightforward, less preparation and of course less cleaning.

Ingredients
  • 2 bunches asparagus
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp oil
  • 2 pounds shrimps
For Marinade
  • 1 cup parsley
  • 2 tbsp oil
  • 1/2 lemon
  • 1/2 medium size onion
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp honey
  • 5 cloves garlic
Instructions
  1. Preheat oven to 425°F, prepare the baking sheet pan, line it with parchment paper or non-stick foil for easy cleaning.

  2. While waiting for the oven ready, put all marinade ingredients (parsley, freshly squeezed lemon juice, onion, salt, black pepper, honey, garlic and oil) on the food processor, marinate the shrimp for 10 minutes.

  3. Wash the Asparagus, trim the hard part, pat dry then arrange it on the sheet pan, sprinkle salt, black pepper and oil.

  4. Arrange the marinated shrimp on the sheet pan.
  5. Bake it for 10 minutes then flip it once, bake it for another 10 minutes or until the Asparagus is soft and the shrimp turn pink.

Recipe Notes

Serve it with rice, quinoa, baked potato or sweet potato.
